Cosmetic: make helm-package passes --version and --app-version from the
tag, so these fields decide nothing about what is published. They are kept
in step so the tree heading for v0.7.1 does not say 0.7.0, as in
the 0.7.0 placeholder commit and 295dc3a.

Niklas Ye 9cc1b54cf6 Pin the demo to terdut-server v0.51.0
Same reason as 03df2bd: the kind demo shows the current web UI, which now
draws boolean alert metrics as an on/off timeline. The demo has no
Prometheus and sets no allowedHosts, so that stays off here; v0.50.0's
migration 003 runs on the demo's fresh database at startup.
